Hello,

I am looking to set up a IM server that also has the ability for
chat rooms or multiuser conferencing or whatever its called.

I am currently Googling for it but I was curious if anyone had any
experience with one?

Oh yeah, some additional features but not necessary could include:

Web based client
Ability to use any XMPP type client
Blackberry and/or Iphone based client

Also, if its an extension/addon for a content management package or
something, I could take a look at that also.

If I'm not mistaken, XMPP is what you're looking for. If not, I'd like to hear if you find what you're looking for. I've been off and on looking at different servers myself.
Just out of curiosity, what platform are you planning on installing it on?

He's looking for a server... does Trillian offer one? I thought they were strictly a client.

BTW, if you don't mind it being hosted off-site, Meebo might be perfect for you. They have a web-based client that can connect to any XMPP server, plus just about every social network out there (Yahoo IM, AIM, Google Talk, Myspace, Facebook, etc).
I'm sure they have clients for smartphones, haven't looked, and you can create chat rooms on there. Using the web client, they have video teleconferencing. They also have widgets you can install in your webpages, for the chatrooms.

Have you tried JABBER? You can put together a server in a hurry with one.. it's also open source.
