Title: Xxcarol's Savory Potato salad

Yield: 8 Servings
4 lg Yukon or red potatoes
1/3 c Mayonaise; or more to taste
1/4 c Onion; small chopped
2 tb Dark grainy mustard
2 ts Black pepper; or more
1 ts Salt; to taste
This is a very simple tangy savory potato salad, with no sugar used
at all. Do NOT use 'miracle whip dressing' in place of of Mayo.
Helmans, Kraft, Dukes, or Kewpie are good choices.
Cut potatoes to largish cubes of about 3/4" and simmer until
tender. Yukons and Red potatos hold their shape under long cooking
unlike Idaho/Russets. I do the 'rustic' which means scrub well but
don't peel.
Once potatoes are ready, drain and set aside. Mix mayo, mustard,
black pepper (I like the Whisky Barrel Smoked Black Cracked Pepper).
Taste and ajust with salt and possily more mustard.
Add dressing to potatoes and add chopped onion mixing it in. Can be
served warm or chilled.
Optional garnish, one or all of the following, chopped chives (fresh
or dried), chopped green onion tops, sliced eggs (1/4 to 1/3"
slices). Serve with hot sauce on the table.
