MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Frugal Crustless Quiche

Yield: 1 Pie

1 md Onion
5 Eggs
1 1/4 c Large curd cottage cheese
1/2 lb Monterey Jack cheese; cut
-into 1/8 to 1/4" cubes
1/3 c Margarine; melted and cooled
1/4 c Flour
1/2 ts Baking powder
1/8 ts Salt

Preheat oven to 400°F.

Slice onion into 1/4" wedges and saute in skillet that has been
sprayed with cooking spray; remove from heat and cool.

Beat 5 eggs in large bowl of mixer or use whisk. Add remaining
ingredients and mix until well combined. Stir in onions. Pour into a
13x9" baking dish.

Bake for 15 minutes at 400°F.

Lovely quick item to make. Squares can go off in lunch bags for
work/school.

Small family? Want to make less at a time and eat hot? Prepare all
the mix then pour what you need in muffin baking cups set in a muffin
tin. Bakes for 10 minutes if 4, check at 10 minutes if 6 (may need
another minute).
