    Never had clotted cream in my 82 years. Jam - that's a whole 'nother
    sory. Bv)= I do note, though, that most of the pixtures of scones
    I've seen are of a triangular pastry. The "Potato Pete's" look ore
    like my Dad's biscuits.

    Here's a biscuit mix/recipe I've done several times. I'm not as good
    as Dad was - but they're not hockey pucks and are quite edible, if I
    do say it myself.

    Title: Whole Wheat Biscuit Mix - BHG
    Categories: Breads
    Yield: 48 Servings

    6 c A-P flour *
    4 c Whole wheat flour *
    1/3 c Baking powder
    1/4 c Sugar
    2 ts Salt
    2 c Lard or Crisco shortening

    Looks similar to the one I've made a number of times but I use all
    whole wheat flour (only 8 cups), no sugar and add about a cup and a
    half of powdered milk. There are a number of similar versions out
    there; my recipe comes from the La Leche League, International
    cookbook, "Whole Foods For The Whole Family".

    IOW you use something like this one:

    Title: Whole Wheat Biscuit Mix
    Categories: Breads, Dairy
    Yield: 9 Biscuits

    8 c Whole wheat flour
    1 1/2 c Non-fat dry milk
    5 tb Baking powder
    1 tb Salt
    1 c Butter; softened

    Combine dry ingredients in large bowl. Work in butter with
    pastry cutter until fine. Store in air-tight container in
    refrigerator.

    To make a batch of biscuits, use 2 cups of mix and about
    3/4 cups of water. Bake at 450├╕F/230├╕C for 8-10 minutes.

    Yield: 8-10 biscuits.

    Rip tides, storm surges, winds, all that stuff. A hurricane can reach
    out over quite a large area, and one this strong can do a lot of damage hundreds of miles from the center of the storm.

    as a holiday season present for my sister-in-law.

    Title: Baked Filets w/Stuffing
    Categories: Seafood, Breads, Herbs, Vegetables, Pork
    Yield: 6 Servings

    4 c Day-old bread; in cubes
    1/4 c Minced onion
    1/2 c Minced celery
    1/2 c Melted butter
    1/2 ts Salt
    1/4 ts Pepper
    3/4 c Poultry seasoning (Bell's)
    1 c Broth or stock
    6 (8 oz ea) Boston Bluefish;
    - (pollock) or other fish
    - filets
    1/4 c Bacon; cooked crisp and
    - crumbled
    1/4 c (or more) chopped, stuffed
    - olives

    Thaw fish if frozen. Saute onion and celery in 1/4 cup
    butter. Mix with bread cubes. Add seasonings and toss to
    mix. Add broth about 1/4 cup at a time and mix well.
    Stuffing should not be too soggy. Spread stuffing in
    thin layers in a greased, shallow baking pan. Arrange
    filets on top of the stuffing.

    Mix remaining quarter-cup of butter, bacon and olives.
    Sprinkle over filets. Bake in a moderate (350ºF/175ºC)
    oven for 35 to 40 minutes or until fish is fork tender.

    To serve, use a bread spatula to lift fish and stuffing
    together. Serve with buttered squash and fried onions.

    Makes 6 servings

    I-26 is not fixed here in TN. They have to do a lot of work to be able to
    just get one lane in either direction open. From wjhl.com:

    "Sections of I-26 are still under construction in Erwin. Borden said they
    are actively working to reopen other sections.

    We're still cut off fron NC/Asheville and that I-40 section that went is

    Title: Shanghai Beef
    Categories: Asian, Beef
    Yield: 4 Servings

    1 lb Flank steak, cut into strips
    1 cn 10 1/2 oz. condensed beef
    -Broth
    2 tb Oil
    8 oz Can sliced water chestnuts
    -drained
    1/4 c Water
    1 md Red bell pepper coarsely
    -chopped
    4 tb Soy sauce
    2 tb Cornstarch
    5 Scallions cut diagonally
    -into 1" pieces
    1/4 ts Black pepper
    1 1/2 c Dry rice

    Brown beef in hot oil in a skillet, about 5 minutes. Add water
    chestnuts, red bell pepper, scallions, and pepper. Cook 2 minutes
    longer. Mix broth, water, soy sauce, and cornstarch; stir into beef
    mixture. Cook and stir until mixture thickens and comes to a full
    boil. Stir in rice. Cook; remove from heat. Let stand 5 minutes.
    Fluff with a fork. Makes 4 servings.

    Personally, I wouldn't want to travel on the two remaining lanes until
    the area around the highway was well stabilised and a barrier set up
    between the road and the water. Right now they're just beginning to
    assess damages and start debating what to do. I've read some folks think
    that this section of I-40 needs to be re-routed to avoid the problems it
    has had over the years; that would be very expensive and time consuming
    but when you look at how many times that section of road has been
    closed, it starts to make sense. I'll keep y'all updated on recovery
    progress in western NC; a lot has been done (mostly by non governmental sources) and a whole lot more is yet to be done.

    Meanwhile, we're in western NY for a few days; I enjoyed a beef on 'weck sandwich followed by a slice of chocolate mousse pie for supper tonight.
