    Title: Tex-Mex Summer Squash Casserole
    Categories: Squash, Cheese, Vegetables, Chilies, Salsa
    Yield: 10 servings

    10 c Yellow summer squash; sliced
    - (about 10 cups)
    2 1/4 c Shredded cheddar cheese;
    - divided
    1 md Onion; chopped
    4 oz Can chopped green chilies
    4 oz Can diced jalapeno chilies;
    - drained
    1/4 c A-P flour
    1/2 ts Salt
    3/4 c Salsa
    4 Green onions; sliced
    1/4 c Chopped red onion

    Set oven @ 400┬║F/205┬║C.

    In a large bowl, combine squash, 3/4 cup cheese, onion,
    chiles and jalapenos. Sprinkle with flour and salt; toss
    to combine.

    Transfer to a greased 13" X 9" baking dish. Bake,
    covered, until squash is tender, 30-40 minutes.

    Spoon salsa over top; sprinkle with remaining 1 1/2 cups
    cheese. Bake, uncovered, until golden brown, 10-15
    minutes longer. Let stand 10 minutes. Top with green
    and red onions before serving.

    Title: Tortilla Pie
    Categories: Beef, Vegetables, Chilies, Cheese, Breads
    Yield: 4 servings

    1/2 lb 90% lean ground beef
    1/2 c Chopped onion
    2 cl Garlic; minced
    1 ts Chilli spice mix
    1/2 ts Ground cumin
    14 1/2 oz Can Mexican diced tomatoes;
    - drained
    3/4 c Ricotta cheese
    1/4 c Shredded mozzarella cheese
    3 tb Minced fresh cilantro;
    - divided
    4 (8") whole wheat tortillas
    1/2 c Shredded Cheddar cheese

    Set oven @ 400ºF/205ºC.

    In a large skillet, cook and crumble beef with onion and
    garlic over medium heat until no longer pink, 4-6
    minutes. Stir in spices and tomatoes. Bring to a boil;
    remove from heat. In a small bowl, mix ricotta cheese,
    mozzarella cheese and 2 tablespoons cilantro.

    Place 1 tortilla in a 9" round baking pan coated with
    cooking spray. Layer with half the meat sauce, 1
    tortilla, ricotta mixture, another tortilla and
    remaining meat sauce. Top with remaining tortilla;
    sprinkle with cheddar cheese and remaining cilantro.

    Bake, covered, until heated through, 15-20 minutes.
