    Title: Colcannon Potatoes
    Categories: Greens, Potatoes, Vegetables, Dairy, Pork
    Yield: 12 Servings

    2 lb Head cabbage; shredded
    4 lb Medium potatoes; peeled,
    - quartered
    2 c Whole milk
    1 c Chopped green onions
    1 1/2 ts Salt
    1/2 ts Pepper
    1/4 c Butter; melted
    Minced fresh parsley
    Crumbled cooked bacon

    Place cabbage and 2 cups water in a large saucepan;
    bring to a boil. Reduce heat; simmer, covered, until
    cabbage is tender, about 10 minutes. Drain, reserving
    cooking liquid; keep cabbage warm in separate dish.

    In same pan, combine potatoes and reserved cooking
    liquid. Add additional water to cover potatoes; bring to
    a boil. Reduce heat; cook, uncovered, until potatoes are
    tender, 15-20 minutes. Meanwhile, place milk, green
    onions, salt and pepper in a small saucepan; bring just
    to a boil and remove from heat.

    Drain potatoes; place in a large bowl and mash. Add milk
    mixture; beat just until blended. Stir in cabbage. To
    serve, drizzle with butter; top with parsley and bacon.

    Title: Tri-Color Pasta Salad
    Categories: Pasta, Vegetables, Cheese
    Yield: 14 servings

    1 12 ounces bag tricolor
    - spiral pasta
    4 c Fresh broccoli florets
    1 pt Grape tomatoes
    6 oz Pitted ripe olives; drained
    1/8 ts (ea) salt & pepper
    1 1/2 c Italian salad dressing
    - w/roasted red pepper &
    - Parmesan

    In a Dutch oven, cook pasta according to package

    directions, adding the broccoli during the last 2
    minutes of cooking. Drain and rinse in cold water.

    Transfer to a large bowl. Add the tomatoes, olives, salt
    and pepper. Drizzle with salad dressing; toss to coat.
    Chill until serving.
