    Title: Nam Prik Gaeng Ped (Thai Red Curry Paste)

    Yield: 3/4 cup

    1 tb Coriander seeds
    1 ts Cumin seed
    5 Dried red chilies;
    - slit lengthwise; deseeded,
    - and soaked in hot water
    - for 15 minutes
    3 tb Shallots; sliced
    8 cl Garlic; smashed
    2 sl Galangal; up to 3, thin
    2 tb Lemongrass; inside of
    - thickest part of stem
    - only; sliced
    2 ts Kaffir lime rind; grated
    1 tb Coriander root; chopped
    10 Black peppercorns
    1 ts Dried shrimp paste

    Preparation time: 15 minutes
    Cooking time: 5 minutes

    Dry-fry the coriander and cumin seeds in a wok or frying pan over low
    heat for about 5 minutes, then grind to a powder in a blender or
    mortar and pestle. Add the remaining ingredients, except the shrimp
    paste, and grind well. Add the shrimp paste and grind again.
