    There has been a push behind the scenes lately to remove echoes that
    have little to no traffic. HOME_COOKING's last non-UDD message was
    some troll hate message about Jews and TBH, I'd rather just push the
    good traffic into here.

    For some reason, I am craving mac and cheese with hot dogs which is something I haven't had since I was a kid.

    Title: Loaf Pan Mac 'n' Cheese
    Categories: Paasta, Cheese, Beef
    Yield: 4 servings

    12 oz (2 boxes) macaroni & cheese
    5 tb Butter; melted
    1/2 ts Dry mustard
    3 lg Eggs; beaten
    2 c Shredded Cheddar cheese;
    - divided
    4 Beef hot dogs; sliced 1/2" *

    * can substitute bratwurst or kielbasa - UDD

    Set oven @ 350oF/175oC.

    Coat a 9" x 5" loaf pan with cooking spray.

    Cook macaroni according to package directions; drain and
    return to pot. Add butter, the cheese packets, and
    mustard; mix until thoroughly combined. Stir in eggs and
    1-1/2 cups cheese; mix well. Stir in hot dog slices.
    Spoon mixture into loaf pan.

    Bake 35 minutes, then sprinkle with remaining 1/2 cup
    cheese. Continue baking 15 minutes, or until golden. Let
    sit 10 minutes, then slice and serve immediately.

    Title: "Tex-Mex" Mac 'n Cheese
    Categories: Casseroles, Cheese
    Yield: 4 Servings

    1 lb Ground beef
    OR ground turkey
    1 Bell pepper -- chopped
    1 Onion -- chopped
    1/2 c Mushroom -- sliced
    1 cn Tomato paste
    1/2 c Water
    1 cn Whole kernel corn --
    Undrained
    Salt, pepper, seasonings --
    As desired
    1 pk Macaroni and cheese
    OR Velveeta and Shells

    In large skillet, brown the ground beef or turkey with the chopped
    pepper, onion and mushrooms. Stir in the tomato paste and water and
    corn. Cook the macaroni and cheese according to package directions,
    adding milk and margarine if required. Add the macaroni and cheese
    to the beef mixture. Mix well and serve.

    Here's one I make occasionally which I've mot MMed - yet. Make as much
    or as little as suits you ...

    Prepare and boil pasta.

    Make the cheese sauce by melting butter in a pan and mixing it with grated/shredded cheese*, flour, and seasonings.

    Assemble the casserole by mixing the sauce with the macaroni & spreading
    it into a baking dish. **

    Bake for 25 minutes until hot, bubbly, and golden brown1.

    You can also add bacon and pepper as toppings if desired. (Mandatory in
    UDD's Kitche)

    * I avoid pre-shredded cheese mostly because of the anti-caking stuff
    they mix in. Plus I have a very nice rotary grater/shredder. Bv)=

    ** I have some metal "souffle"/"au gratin" dishes I bought years ago
    on America's Marketplace (eBay) They work a treat for individual baked (whatever) and as chilli bowls. Here's a link to a very similar item so

    Title: Scandanavian Salmon Souffle
    Categories: Low-fat, Seafood, Lunch
    Yield: 1 Servings

    1 sl Wholewheat bread
    1/4 c Drained, flaked canned
    - salmon
    1 Egg, beaten
    1/2 c Evaporated skim milk
    1 tb Chopped onion
    1 tb Chopped celery
    1 tb Chopped parsley
    1 ts Lemon juice
    1/4 ts Dried dill weed
    1 ds Pepper
    1/4 ts Worcestershire sauce

    1. Preheat oven to 350 degrees. Coat small souffle dish with non-stick
    spray. 2. In bowl, break bread into small pieces. 3. Mix in remaining
    ingredients. 4. Pour mixture into prepared souffle dish. 5. Bake 35
    minutes or until knife inserted in center comes out clean.
