    Hi All,

Well the author of accuchef has retired. If you hit up the website now
you can score yourself the last version including the reg code.

I've been using it for a few years since Sean told me about it and
I got my money's worth from paying for it, but now it's free I highly
recommend you check it out if you are tired of the DOS meal master.

I nhave a registered copy but I am habituated to Meal Muncher. I'm more
likely to use Accu-Chef and Master Cook, which I also own. Bv)=

Ooooopsie - just went to open it and found that my registered version is

    MMMMM---------------------------CRUST--------------------------------
7 1/2 oz Pkg Chebe Original Cheese
    - Bread Mix
    2 tb Olive oil
1 c Shredded cheese; sharp or
    - hard works best, firmly
    - packed
    2 lg Eggs
    4 tb Water

    MMMMM--------------------------TOPPINGS-------------------------------
1 1/2 c Cooked chicken; in sm pcs
    1/2 Recipe of pesto
10 oz San Marzano tomatoes; seeded
    - halved
    8 oz Fresh mozzarella
    Parmesan and/or Romano;
    - grated
    Feta crumbles

    MMMMM---------------------------PESTO--------------------------------
    1 c Fresh basil; packed
    2 tb Pine nuts
    1 cl Garlic; minced
    1/4 ts Kosher salt
    1/8 ts Coarse ground pepper
    1/3 c Extra-virgin olive oil
1/4 c Grated Romano or Parmesan
    - cheese

Set your oven @ 450oF/232oC. Lightly oil your pizza pan.

Place your mozzarella between two paper towels to remove
    moisture.

In a large bowl, beat the eggs before adding the
shredded cheese and 2 Tbsp of oil. Mix well with a fork,
then slowly add the Chebe Original Cheese Bread mix.
Stir well with a spoon before adding 1/4 cup of water.
Mix as well as you can with a spoon, then knead the
dough with your hands until smooth.

Place the pizza dough on an oiled 14 inch cast iron
pizza pan and spread it out evenly with your hands.

Par bake the crust on a shelf in the bottom third of
your oven for 12 minutes. Flatten out any bubbles with
the back of a fork before adding toppings.

Brush the pesto on your pizza. Add the tomatoes and
chicken. Finally, add the mozzarella, and an even
sprinkle of Parmesan, Romano, and/or Feta cheese.

Bake for another 11 minutes on the bottom shelf before
moving the pizza to the top third of your oven and
turning it to broil. Broil for a minute or two until the
cheese is bubbly and perfectly browned.

Loosen your pizza from the pan with a large spatula
before carefully sliding it onto a serving platter or
pizza pan to slice and serve.

PESTO INSTRUCTIONS: Combine the first 5 ingredients in a
food processor, and pulse until they are well combined.
Add the oil and cheese. Pulse until smooth.

This recipe makes enough pesto for 2 pizzas.

I have to begin moving some recipes out of my "Echomail" data file for
recipes I have posted in the cooking echoes. I'm bumping close to the 25K limit. I'll make sure I have all the stuff from (now defunct) Gourmet and
Bon Apetit in their boxes. Ia well as Better Homes & Gardens. I just search
on their "FROM" line and mark them. Then take the resulting files and
import them telling Meal Muncher to skip any dupes. Then go back and turn
all the "M"s into "#"s (destined for the bin) and do a <CTRK>R from the maintenance menu. With the miserable weather we've been having and the
dirty looks all the Anti-Trump signage on the back of my car drawing heat

    Title: Australian Pavlova By Vicky
    Categories: Desserts, Fruits, Dairy, Citrus
    Yield: 9 servings

4 Xl egg whites; room temp
    1 c Castor (superfine) sugar
    2 ts Corn starch
    1/2 ts Vanilla extract
    1 ts Lemon juice
    1 pt Heavy whipping cream
    1 tb Sugar
    Strawberries, blueberries,
    - kiwi fruit or your choice
    - of fresh fruit
    pn Salt

    Set oven @ 275ºF/135ºC.

Line baking sheet with parchment paper and draw an 8"
circle as a guide for the pavlova. Turn paper over so
pencil is facing down. Sprinkle a small amount of extra
corn starch lightly on the circle so pavlova does not
    stick.

When separating eggs, be careful there is NO yolk in the
whites as this will keep whites from beating properly.
In a large very clean bowl, beat whites and pinch of
salt til glossy and softly peak. Do not overbeat. Add
the superfine sugar 1 Tbsp at a time until mixture makes
firm, glossy peaks, but is not dry. Sift corn starch
softly over whites and fold in with lemon juice and
    vanilla.

Spoon mixture over the circle, mounding in center and
then spread outward to make a circle with a slight
depression in the center. Bake for 1 hour. Turn off oven
and cool in oven for 2 hours. Store in airtight
container. Best if served the same day. If it cracks or
sinks, fill with cream when finishing just before
    serving.

Remove parchment paper and place pavlova on cake stand
or plate for serving. Just before serving, beat the
cream with the powdered sugar and 1 tsp vanilla. Fill
depression across the top of pavlova with the whipped
cream and sprinkle cream with your choice of fruit.
    Sliced strawberries, blueberries, kiwi, raspberries,
fresh pineapple, passionfruit or what you like. Do not
add cream and fruit ahead of time as will make the
    meringue soggy.
