Maybe I'll send you a container of my bacon dripping so you can eat all
of the grits that I will not.

    XD

My first bread machine was a DAK. Did very well for me. As it should
have. Kaplan sourced them from WelBilt

I remember DAK too. Don't know from where but I definitely remember the
    name.

Both of those addys are *very* old-school. Today's chirrun would have
    not a clew.

Yep! I am running a FTP server on the BBS. It doesn't get a lot of action except the CCP *loves* to try to upload crap.

Found this recipe doing a search on "DAK bread machine recipes" Looks
    like something I may try.

With regular hominy it's a texture thing, like with kidney beans. They give a subliminal "squeak" when I chomp down on the. And grits unless tarted up past reasonability are so bland as to remind me of wallboard spacke.

I usually will add bacon grease to the grits which is a real flavor enhancer.

Maybe I'll send you a container of my bacon dripping so you can eat all
of the grits that I will not.

Check out the UUCP email address on this recipe...

I tried it last night on a modified version of DAK's blueberry bread
(tastes good with cream cheese for breakfast). From:

MMMMM---- Recipe via Meal-Master (tm) v8.06

    Title: Cinnamon Raisin Bread
    Categories: Breads, Fruits, Spices
    Yield: 10 servings

    1 1/4 c Water
    3 tb Unsalted butter
    2 ts Sea salt
    3 tb Brown sugar (packed)
    4 1/4 c Bread flour
    2 tb Nonfat dry milk
    2 ts gGround cinnamon
    2 ts Active dry yeast
    1 c Raisins
    Unsalted butter; room temp
    - for serving

Place the ingredients in the bread machine pan in the
order listed: 1 1/4 cups water, 3 tablespoons unsalted
butter, 2 teaspoons sea salt, 3 tablespoons brown sugar
(packed), 4 1/4 cups bread flour, 2 tablespoons nonfat
dry milk, and 2 teaspoons ground cinnamon.

Make a small well in the ingredients with your finger.
Add 2 teaspoons active dry yeast to the well; this will
ensure the proper timing of the yeast reaction.

Process the bread in the bread machine at the sweet,
rapid, or timed cycle, or according to manufacturer's
directions. If the machine asks for the size of the
    loaf, select 2 pounds.

Add 1 cup raisins at the fruit and nut signal (about 30
to 40 minutes into the cycle, depending on the machine).
If you add them in the beginning, the raisins will be
    pulverized.

Allow the bread machine to proceed through its cycle and
    bake the bread.

Remove the bread from the pan and place on a rack to
    cool completely before serving.

Serve with room temperature butter and enjoy.

NOTES: No raisins, no problem - Swap raisins for
currants or dried cranberries if you like.

Make it nutty - Add 1/2 cup of chopped and toasted
walnuts or pecans along with the dried fruit.

    Yield: 1 (2-pound) loaf
