    Title: Sloppy Leo Stuffed Avocado
    Categories: Vegan, Fruits, Vegetables, Sauces
    Yield: 4 Servings

    8 oz Tempeh; grated
    7 oz Triple Crown Classic BBQ
    - Sauce
    3/4 c Diced white onion
    1 lg Clove garlic; minced
    2 tb Neutral oil
    4 md Avocados; ripe but not too
    - soft
    16 Grape tomatoes; in coins

    Heat the oil in a skillet and sauté onion and garlic
    just until they become translucent. Add the tempeh and
    cook until it just starts to brown. Add sauce and heat
    just until hot enough to eat. Cover and remove from heat
    while preparing avocados.

    Cut the avocados in half, length wise, and remove pits.
    Scoop out one generous tablespoon from each avocado,
    place in small bowl and mash. Set aside. Now, with a
    spoon mash the remaining avocado flesh in each avocado
    half while still in the shell, hold it firmly so it
    maintains its shape. Spread it out so there is a recess
    in it. This is where you will put the Sloppy Leo. Scoop
    1/4 c of the Sloppy Leo mixture into the avocado shell
    and slightly "mound" it. Then top with one generous
    tablespoon of mashed avocado and 2 of the sliced grape
    tomatoes.

    Now for the fun! Hold the avocado in your hand, scoop
    out the yummy contents and enjoy your Sloppy Leo Stuffed
    Avocado. Pairs will with a vinaigrette coleslaw.
