Title: Kheer (Rice Pudding)

Yield: 1 Batch
1/2 c Small grain rice
2 c Milk
2 c Cream
1/2 c Sugar
1/4 c Golden raisins
6 Unsalted almonds
2 Whole cardamom pods; crushed
1/8 ts Nutmeg powder
Soak the raisins in water. Blanch and slice the almonds. Crush the
cardamom. In a heavy saucepan, cook rice until soft. Add milk and
cream, a little at a time, constantly stirring to avoid lumps. Add
sugar and raisins. Mix well. Keep stirring for about 15 minutes on
low flame. Remove from heat. Pour into a big bowl. Add almonds,
nutmeg powder, and crushed cardamom seed, and mix well. Cover with a
plastic wrap. Serve warm or cold.
