    Title: Pig Foot Salad
    Categories: Pork, Salads
    Yield: 1 Batch

    2 Pig feet; good sized
    2 Pimientos
    Salt & pepper; to taste
    1/4 c Salad oil
    1/4 c Vinegar
    1/4 c Mayonnaise
    1/4 c Mustard
    1 Onion

    If fresh pig feet are used, they must be pickled and cooked until the
    meat is falling away from the bone.

    If prepared pig feet are used, use the same ingredients.

    Take the meat from the bone and chop. Chop pimientos and onion
    finely. Mix together the pimientos and meat, next mix the onion in.
    Mix the salad oil and vinegar together and add this to the mixture.
    Now add the mayonnaise and mustard. Stir to mix all ingredients
    thoroughly.

    Boiled buttered macaroni may be added to this to make an equally
    tempting dish.
