1 1/2 c Almond milk, soy milk, or
- hemp milk
1 ts Apple cider vinegar -OR-
1 tb Lemon juice
1 tb Ground flax seed or
- egg replacer;
- plus:
1/4 c Water
1/4 c Cooking oil
1 ts Vanilla
1/2 c Thick applesauce;
- unsweetened

1 c All-purpose GF flour mix
1/2 ts Xanthan gum
2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
1 ts Cinnamon
Total time: 30 minutes
Add the lemon juice or vinegar to the non-dairy milk and allow to
curdle. Mix the ground flax seed or egg replacer with 1/4 cup water
and let sit for 5 minutes. Preheat the griddle or fry pan on medium.
Blend the wet ingredients together in a bowl, using a whisk. Combine
the dry ingredients in a large pitcher. Mix the wet and dry
ingredients together. Don't over-mix. The mixture should be thick,
thinner than muffin batter but too thick to pour. Try a test pancake,
and if the pancake mix seems too thick, add another 1 to 2 tb milk.
If it seems too thin, add another 1 to 2 tb flour.
Lightly oil the pan. Add a spoonful of batter (about 3 tb) to the pan
and spread it with the back of the spoon into a circle (or any shape
you like) about 1/4" thick and 4" in diameter. Repeat until you have
no more room. Cook pancakes until dry on one side and golden brown on
the other, then flip and brown the other side. These pancakes should
cook slowly, with a total cooking time of 8 to 10 minutes. If the
pancakes are browning too much, too fast, turn the heat down a bit.
Keep on a plate in a warm oven covered by a dish towel until all the
pancakes are cooked.
Serve with more applesauce, or vegan spread and agave or maple syrup.
Tips:
Different brands of GF all purpose flour will absorb more or less
moisture, which is why you might need to add a bit more milk or flour.
Xanthan Gum is an excellent binder but if you don't have it, add 2 tb
corn starch or arrowroot starch. Use any vinegar if you don't have
apple cider vinegar.
If you'd rather make these apple pancakes with regular wheat flour,
use 1-1/4 cups whole wheat pastry flour or white spelt flour to
replace GF mix and xanthan gum.
To make ovo-lacto vegetarian pancakes, use dairy milk in place of
non-dairy milk, and 2 eggs in place of the ground flax seed and
1/4 cup water.
